A simple vegan mayo that works well in sandwich fillings, salad dressings and as a straight condiment. Just measure out the ingredients and blend. Only takes a few minutes.
This is the silken tofu that I typically use for this recipe.

Vegan Oil Free Mayo
A tofu based mayo that oil-free, low calorie and has protein to boot.
Servings: 13 30 gram portions (2 Tbsp)

Equipment
- Stick blender I used a stick blender but any blender or food processor will work
Ingredients
- 1 box Extra firm silken tofu I used Mori Nu extra firm. 1 box is 349g
- 45 ml Apple cider vinegar
- 1/4 tsp kala namak (black salt)
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/3 tsp salt
- 1 tsp dry mustard powder
- 1/2 tsp xanthan gum (optional) I had Bob's Red Mill brand on hand. Helps to thicken I believe but I haven't done a side by side comparison yet.
Instructions
- Put all ingredents in blender and blend until smooth.
