Mayo – Oil-free and Vegan

Homemade vegan oil-free mayo
Jump to Recipe

A simple vegan mayo that works well in sandwich fillings, salad dressings and as a straight condiment. Just measure out the ingredients and blend. Only takes a few minutes.

This is the silken tofu that I typically use for this recipe.

Equipment

  • Stick blender I used a stick blender but any blender or food processor will work

Ingredients

  • 1 box Extra firm silken tofu I used Mori Nu extra firm. 1 box is 349g
  • 45 ml Apple cider vinegar
  • 1/4 tsp kala namak (black salt)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/3 tsp salt
  • 1 tsp dry mustard powder
  • 1/2 tsp xanthan gum (optional) I had Bob's Red Mill brand on hand. Helps to thicken I believe but I haven't done a side by side comparison yet.

Instructions

  • Put all ingredents in blender and blend until smooth.
