Sweet Potato and Black Bean Soup

A warm hearty dish with some earthiness and the right amount of sweet and spicy.

Equipment

  • large pot

Ingredients

  • 2 large sweet potatoes diced into 1 cm cubes. peeled mine because they were a bit gnarly but leave it on if you wish
  • 3 medium carrots sliced
  • 1 medium onion diced
  • 2 ribs celery sliced
  • 3 leaves kale ribs removed and chopped
  • 398 ml black beans 1 can, I drained mine before thinking I shouldn't have. Your preference
  • 283 g Rotel tomatoes 1 can
  • 284 ml creamed corn 1 can, had it for a long time and thought this was a good time to use it. Use regular corn kernels, canned or frozen if that's what you have
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp taco seasoning
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 L vegetable broth I used 1 tsp of Better than Bouillon dissolved in 250ml of boiling water and added another 750ml of boiling water to pot.

Instructions

  • Add all ingredients to pot and stir
  • Place pot over high heat, cover and bring to a boil
  • Once boiling, reduce heat to medium low and simmer for 20-30 minutes, stirring occasionally. This depends on the size of you potato and carrot dice and how soft you like them. I like them squishy so I went 30
  • Serve in a bowl on its own or ladled over brown basmati rice as I did
