It was dinner time and had a couple large sweet potatoes that had been around for a while and had to use. I didn’t feel like baking/roasting them so that kinda left boiling. Figured some black beans would go well with them. From there it was whatever else I found that needed to be used.
Sweet Potato and Black Bean Soup
A warm hearty dish with some earthiness and the right amount of sweet and spicy.

Ingredients
- 2 large sweet potatoes diced into 1 cm cubes. peeled mine because they were a bit gnarly but leave it on if you wish
- 3 medium carrots sliced
- 1 medium onion diced
- 2 ribs celery sliced
- 3 leaves kale ribs removed and chopped
- 398 ml black beans 1 can, I drained mine before thinking I shouldn't have. Your preference
- 283 g Rotel tomatoes 1 can
- 284 ml creamed corn 1 can, had it for a long time and thought this was a good time to use it. Use regular corn kernels, canned or frozen if that's what you have
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp taco seasoning
- 1 tbsp garlic powder
- 1 tsp paprika
- 1 L vegetable broth I used 1 tsp of Better than Bouillon dissolved in 250ml of boiling water and added another 750ml of boiling water to pot.
Instructions
- Add all ingredients to pot and stir
- Place pot over high heat, cover and bring to a boil
- Once boiling, reduce heat to medium low and simmer for 20-30 minutes, stirring occasionally. This depends on the size of you potato and carrot dice and how soft you like them. I like them squishy so I went 30
- Serve in a bowl on its own or ladled over brown basmati rice as I did
